Rosemary extract is obtained from ground dried leaves of Rosmarinus officinalis L using food-grade solvents, namely, acetone or ethanol. Solvent extraction is followed by filtration, solvent evaporation, drying and sieving to obtain a fine powder. Additional concentration and/or precipitation steps followed by deodorisation, decolourisation and standardisation using diluents and carriers of food grade quality maybe included to produce the final product.
Rosemary extract is characterised by its content of carnosic acid and oil ,rosmarinic acid & Ursolic acid , the principal antioxidative agents. Other antioxidant components present include triterpenes and triterpenic acids. Rosemary extract is identified by the total content of carnosol and carnosic acid as a ratio of reference volatile compounds which are responsible for flavour.

Rosmarinic acid is extracted from rosemary (Rosmarinus Officinalis L.), a common household plant that has grown in the Alps since the Middle Ages, is now found throughout the world. Rosemary has been used for thousands of years as a savory spice, food preservative, in cosmetics and hair products, and as an herbal extract for a variety of health disorders. However, the exact chemical pathways involved in its beneficial effects have remained unknown until recently. Rosmarinic acid is considered to be a natural, efficient, stable with high temperature durability, secure, non-toxic without side effects, water-soluble antioxidant and a green food additive. Research has also shown rosemary acid has a strong effect to remove free radicals in the body. Rosemary extract has a longer life span of antioxidant activity. It also contains more than two dozen antioxidants, such as carnosic acid, one of the only antioxidants that deactivates free radicals through a multi-level cascade approach.
Functions :
1.Rosmarinic acid is widely used as an antioxidant and preservative in axunge series, frozen meat, fried food, pet food to prevent them from deterioration. Rosmarinic acid is also used as a preservative in aquatic products, essence, and stabilizer in beverages.
2.Rosmarinic acid has anti-bacterial, anti-inflammatory, and anti-septic, anti-carcinogenic effects. It helps lower blood glucose levels and stimulates hair growth. It can also improve cognition, act as a muscle relaxant.
3.Rosmarinic acid is able to converge and repair strong moisture and wrinkle. It also helps remove freckle and scars and increase skin elasticity and shine.
